Chicken Cheese Broccoli Orzo Casserole
I love casseroles because everyone in my family loves them and it’s a good way to add in things like broccoli or orzo they wouldn't normally eat. This recipe is also great for leftovers! It’s a good hearty meal and gives my daughter the calories she needs.

Ingredients
- 2 c cooked orzo
- 3 c chopped broccoli
- 1 c sour cream
- 1/2 c mayonnaise
- 1 can(s) cream of chicken soup
- 2 c shredded cheddar cheese
- 4 c cooked chicken (can be canned)
- 1/4 tsp garlic salt
- 1/4 tsp pepper
- 1/4 tsp Cajun seasoning
- 3/4 c crushed Ritz crackers

Instructions
Prep Time: 15 minutes
Cook Time: 40 minutes
Step 1
Preheat oven to 350 degrees, grease a 9x13 pan.
Step 2
Combine sour cream, mayo, cream of chicken soup and spices.
Step 3
Add orzo, chopped broccoli, chicken & 1 1/2 cups of the cheese.
Step 4
Pour into baking pan
Step 5
Bake in oven for 30 minutes.
Step 6
Top with Ritz crumbs, 1/2 cup cheese; bake 10 minutes.
