Chicken and Shrimp Stir Fry Bake

I lived next door to my friend of 18 years who has cystic fibrosis and before he had a girlfriend I used to cook him food every week because he did not have the time. His girlfriend now still uses all of my recipes.

Ingredients

  • 1 lb chicken
  • 2 eggs
  • 2-4 tsp milk
  • 2 stick(s) butter
  • 1 lb shrimp of any size (frozen is easier and less expensive)
  • 2 green peppers
  • 2 sweet onions
  • 2 c cheddar cheese
  • 3 cloves of garlic
  • 2 c bread crumbs
  • 1 lb pasta or 3 cups of rice

Instructions

Step 1
Preheat broiler to 350 degrees.

Step 2
First chop up all the vegetables and garlic as you like.

Step 3
Place two eggs in a bowl with about 2-4 teaspoons of milk and stir together.

Step 4
Dip each piece of chicken in the bowl and cover each piece with egg mixture.

Step 5
Place bread crumbs in a shallow bowl and cover each chicken piece with bread crumbs.

Step 6
Place a stick of butter in a pan on high and wait until it is melted.

Step 7
Turn down the heat and place all the garlic in the butter for about one minute.

Step 8
Add all the vegetables to the pan and cook them till they are soft.

Step 9
When the vegetables are halfway done, add the shrimp and cook until no longer frozen and pink.

Step 10
While the shrimp is cooking, melt the other stick of butter in another pan and cook the chicken until golden brown.

Step 11
Place rice or pasta in a pot of boiling water and cook.

Step 12
Mix the vegetables into the cooked rice or pasta.

Step 13
Place shrimp, vegetables and rice or pasta into a baking pan and add ½ cup of cheddar cheese. Top with the chicken and cover with remaining cheese as you like.

Step 14
Cook in broiler at 350 degrees until cheese is bubbling.
