Italian Sausages and Peppers in Tomato Sauce
This recipe is from my maternal grandmother, Laura. She grew all of her own vegetables in her backyard garden, but I modified the recipe to use canned tomatoes. I have an adult son with CF.

Ingredients
- 10 Italian sausages, some hot, some sweet
- 1/4 c vegetable oil
- 1 onion, sliced
- 1 c water
- 3 yellow peppers, sliced in strips
- 3 green peppers, sliced in strips
- 3 red peppers, sliced in strips
- 3 c canned Italian plum tomatoes in puree, chopped
- Salt and pepper to taste
- Mashed potatoes or Italian bread
- Add All Ingredients
Instructions
Step 1
Cut sausages into 1 1/2" segments and place in a large, deep skillet with the water.
Step 2
Bring to a boil on medium heat.
Step 3
Let the water evaporate and allow the sausages to brown slightly in the accumulated fat. Drain sausages and set aside (they are not fully cooked at this point).
Step 4
Heat oil in a large pot over medium heat.
Step 5
Add the onions and cook until soft and slightly brown, stirring occasionally.
Step 6
Add the tomatoes with the puree, plus the salt and pepper. Simmer for 25 minutes.
Step 7
Add the sausage pieces and the pepper slices to the tomato mixture.
Step 8
Cover and simmer for an additional 25 minutes.
Step 9
Serve over mashed potatoes or crusty Italian bread to mop up the wonderfully sweet sauce.
