Carrie's Southwest Salad
I am the mother of a 37-year-old adult with cystic fibrosis. He is doing well, has a full time job and enjoys eating this as a salad or appetizer with corn chips.

Ingredients
- 30 oz black beans, drained
- 17 oz whole kernel corn, drained
- 2 large fresh tomatoes, chopped
- 2 large ripe avocados, diced
- 1 small red onion, chopped
- 1/2 c chopped fresh cilantro
- 1 Tbsp red wine vinegar
- 4 Tbsp lime juice
- 2 Tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper

Instructions
Step 1
Mix the beans, corn, tomatoes, avocados, red onion and cilantro in a large bowl.
Step 2
Mix the vinegar, lime juice, olive oil, salt and pepper together and pour over the salad.
